Experience: Pioneer as a 100% organic wine merchant in Paris in 2011 with an innovative concept combining a wine cellar, wine bar, and dining table. Co-founded "La Table du Caviste Bio," a gourmet restaurant, with Junko Kawasaki in 2017.
Wine Expertise: Known as a discoverer of wine talents, Dominique has personally selected over 350 references of organic and biodynamic wines from major appellations for the restaurant, all from vineyards adhering to an organic charter.
